- 1 1/2 lbs Russet Potatoes
- 1 tsp Low FODMAP Cooking Oil
- 1 tbsp Unsalted Butter
- 1/4 tbsp Thyme
- 1/4 tbsp Paprika
- Salt & Pepper to taste
Peel (optional), dice into cubes, and wash the russet potatoes.
Prep potatoes by bringing a pot of salted water to a boil and boiling the potato cubes until they are almost tender and drain.
Put cooking oil and unsalted butter into medium sized pan and melt over medium heat.
Place the potatoes in the pan and season with thyme, paprika, salt, and pepper. Distribute the potato cubes evenly throughout the pan, ensuring as many are touching the pan as possible.
Cook until the bottoms begin to crisp and then flip/stir, making sure there are as many new sides of the cubes are touching the pan.
Cook until slightly browned and desired consistency is reached.
